oatmeal pancakes

I love my breakfasts so having the extra time to make something that is a little more special is perfect for me. These hearty oatmeal pancakes are perfect for the mornings when there is just enough time to enjoy something a little more special before flying into a full day. Throw on some fresh fruit and smother in syrup.

Oatmeal Pancakes (6 pancakes)

  • 1/2 cup flour
  • 1/2 cup oats
  • 1 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1 tsp vanilla
  • 2 Tbsp oil
  • 1 egg

Mix dry ingredients. Add in all the others and mix really well with a fork. Heat the pan on medium heat and add a bit of oil or butter. When it is hot, spoon on the batter. You will know it is ready to flip when there are bubbles forming on the top.

I usually just cook enough for the day then put the batter in the fridge to enjoy the rest the following day. The oats will soak up a lot of the moisture which will make them a lot thicker the second day. I love them both ways!
